It sounds as if you took better care than the barn did. I would point out in a registered letter so you have proof you sent it that instead of the expense of suing you (which I agree with the previous post, she mostly likely wont) the owner would be better off putting that time and energy into getting this horse sound and better trained. If you only had a verbal contract and you have proof of all you did to care for the horse what is she suing for ? The stress of a move could have affected his diet. Good luck -
